My friend Leslie one day called me the Sorceress of the kitchen. Well this past weekend the Sorceress made Tamales. I thought I would share with you this wonderful delight.

First step is to soak the corn husk.

Overnight is the best.

The masa is a very tender dough made with butter and broth.

This is my pulled pork cooking away on the stove.
This is a very tedious method.
But the results are out of this world.

Corn and peppers prier to entering the oven which was set on broil.

A roasted orange bell pepper

fresh off the cob roasted corn

Place the still hot pepper in a ziploc bag.
Place in fridge for about 10 minutes

Remove peppers from bag and skins will simply slip away from flesh.

Dollop about a tablespoon of the masa onto the cornhusk

Evenly spread the masa onto the cornhusk

Sprinkle on your desired filling.
This time I did the roasted pepers and corn and pulled pork.

Fold in the two ends of the husk.
Hannah is my lovely hand model.

Then roll it up.

Here are the finished products .
The tamales are then steamed for an hour.
Unwrap and enjoy as Hannah put it, " a whole lot of heaven."

I can't believe I wasn't home when you brought me one. Man, I missed out. You are a sorceress, you made me drool.
I love this "cooking with Amberlyn" idea and you should definitely keep it up. That way even living far from you you can still teach me how to cook!:) I would like you to do a class on seasonings and spices and how to mix and match them...thanks so much! :)

Sheesh Martha! You are an excellent cook! Remember those zuccini and caramelized pizza's we used to have? Those were delicious!I stopped making them they just don't taste like yours.
