Thanksgiving Stuffed

Last night turned out great. Amy did the table, and it looked great. She found all the accessories at the Dollar Store. Hello, love it when you find cheap fabulous items. The glasses were very festive!! While I finished up nursing Grace, Amy heated up the corn tortillas. I told her that if she could be nursing Grace, I would be over in the kitchen warming the tortillas. I have to say that the biggest hit was by far the Lime and Angel Food Cake Roll. And I have that listed below. I have to tell you that it took me longer to put together this blog then it did to cook the food for Book Club!!! I hope you try the recipe because it really is fabulous!!! Another hit was the Pina Coladas. Easiest recipe in the world (which I also included below). After we were done eating Monica commented that she was " Thanksgiving Stuffed". I will take that as a compliment. We missed those of you who couldn't make it!! Momi and Cathy!!
It was so great to see the Ladies from Book Club. I feel so overjoyed that Amy asked me to join her book club those 3 short years ago. And to have the other ladies so gracious welcome me into their circle. It has been so much fun getting to know every one. And due to the fact that we all live in different cities it keeps all of our meetings fresh, new and exciting!!! Yes, we briefly talk about the book but we mostly talk of other things. It is such a great release for me. As my husband would so lovingly have me refer to it as Girls' Night Out, rather then the former.

Lime and Angel Food Cake Roll

1 box Angel Food cake mix
1 recipe lime curd (see below)
1 recipe cream cheese mixture (see below)

1. Follow Cake mix to package direction. Place a large piece of parchment paper over a cookie sheet pan. Spread cake mix evenly over parchment and cook in a 350 oven for 15-20 minutes till golden brown.
2. While cake is still warm take a large kitchen towel and dust with powdered sugar. Place the cake on top of towel and peal off parchment and dust once again with powdered sugar. Roll cake up in towel and place in Fridge for at least 4 hrs to cool and set. Overnight is best.
3. Unroll cake, spread the cream cheese mixture evenly over cake, leaving a half inch around all sides. Then spread the lime curd on top of the cream cheese mixture. Roll cake back up. Wrap towel around cake and place back into the fridge for another 2hrs to set.
4.Frost roll with cool whip and decorate with toasted coconut.
5. You could also add a layer of toasted coconut on top of the curd before rolling up cake. This would add great flavor and texture.

Lime Curd
2/3 cup sugar
4 tsp cornstarch
4 tsp finely shredded lime peel(3 limes)
1/2 cup lime juice
1/2 cup butter
4 beaten eggs

1. In a medium saucepan combine the sugar and cornstarch. Stir in lime peel and lime juice. Add butter. Cook and stir till thickened and bubbly.
2. Slowly pour lime mixture into eggs while whisking. Pour back into pan, cook and stir for 2 more minutes (mixture will get thick). Very important, you really should push this mixture through a fine sieve. Any curdled eggs and lime zest will be filtered out and all you have left is a creamy smooth mixture. Then, cover with wax paper and let cool.

Cream Cheese Mix
1 package cream cheese
1/4 - 1/2 cup powdered sugar ( too taste)
zest of 1 lime
juice of 1 lime

1. Blend all ingredients till smooth





Both desserts. The Truffle Mousse Pie turned out so so I thought.

Close up of the Pina Coladas:

2 Cups Pineapple Juice
1/2 a can of coconut cream (not milk), mix with a fork before adding to blender
3 cups ice

Whiz in a blender till smooth. Top with Cool Whip and Cherry!!

I am trying to figure this all out: I need to go back to school and work my brain again. I just wanted to say it looks like you did a beautiful job. I so miss living behind you. You are so passionate about your cooking. I am impressed with how it all turned out.

I must say it was the perfect night. We had restaurant quality food with the comfortability of being at home. I'm so lucky to have talented friends! And those pictures turned out great- man- we are HOT!
